Genuine sourdough with a mission — a Glasgow bakery giving former prisoners a real career path
About Freedom Bakery
Freedom Bakery has been baking in Glasgow since 2015, producing proper long-fermented sourdough without shortcuts or industrial dough conditioners. But the bakery is also something rarer: a working craft training ground for people leaving prison, giving them a genuine trade and a route away from reoffending.
Their bread is already trusted by other serious local food businesses — Freedom Bakery’s sourdough is sold through Locavore, one of Glasgow’s most established ethical food retailers, which says as much about quality as any certification could.
Choosing Freedom Bakery means the same thing our whole mission means: putting your money toward people and processes that build something real, instead of an anonymous supply chain optimised purely for cost.

Why We Recommend Freedom Bakery
Real Sourdough, No Shortcuts
Long fermentation, minimal ingredients — bread made the way it was made before industrial bakeries found ways to speed the process up at the cost of flavour and digestibility.
Quality Already Proven
Being stocked by Locavore isn’t a small thing — it means another serious, ethics-led Glasgow retailer has already vetted this bread and put their own name behind it.
Your Money Builds Something
Every loaf supports a training programme that gives people leaving prison a genuine trade — food and social impact from the same purchase.
